Mixed Cheese

Made from pasteurised cow’s milk (at least 50%) and sheep’s milk (at least 30%). it consists of a pressed paste, like pure sheep cheese. In this case, it is made with pasteurized milk, Salted by immersion in brine, it is ripened in controlled temperature and controlled moisture chambers. classified according to its ripening time as Soft, Semi-Cured and Cured.

 

Aged

Its 365-day long ripening period makes it ideal for consumers who prefer intense flavours.

Soft

Ripened under controlled conditions for 30 days. Ivory colour, mild flavour and creamy to the palate with its characteristic aroma.

Semi-Cured

Ripened under controlled conditions for 90 days. Ivory colour, exquisite flavour and soft texture.

Cured

Ripened under controlled conditions for 150 days. Ivory colour, intense flavour and distinctive character.
