Sheep cheese

Made from 100% raw ewe’s milk (except for the pasteurised soft cheese), this cheese is made by enzymatic coagulation and is intensely pressed, therefore it has the consistency of a pressed paste cheese. Salted by immersion in brine, it is ripened in controlled temperature and controlled moisture chambers. It is classified according to its ripening time as Soft, Semi-Cured, Cured and Aged.

 

Soft

Ripened under controlled conditions for 30 days. Ivory colour, mild flavour and creamy to the palate with its characteristic aroma.

Semi-Cured

Ripened under controlled conditions for 90 days. Ivory colour, exquisite flavour and soft texture.

Cured

Ripened under controlled conditions for 150 days.Ivory colour, intense flavour and texture with a distinctive character.

Aged

Its 365-day long ripening period makes it ideal for consumers who prefer intense flavours.
